Spicy Basil Thai Fried Rice


Difficulty: EASY, but a lot of ingredients :)

Things You'll Need:

  • 3 tbsp of vegetable oil
  • 6 gloves of garlic
  • 1-2 green and/or red serrano pepper
  • 1/2 lb of sliced chicken breast, thinly sliced beef, deveined shrimps with shells removed or strips of firm tofu.
  • fish sauce
  • oyster sauce
  • white sugar
  • 1/4 cup of dice green onion
  • half a red bell pepper (sliced)
  • cilantro
  • 1 bunch basil
  • 1 cucumber
  • 2 limes
  • 1-2 eggs
  • 5 cups of cooked & refrigerated jasmine rice

Step 1

Make sure to cook plain, white jasmine rice before you make the fried rice.

  Step 2

Combine and finely chop 6 gloves of garlic (if you don't like garlic, it's not necessary to put a lot) and 1-2 serrano peppers.

  Step 3

Heat vegetable oil in pan on medium/high heat (preferrably a wok. As soon as the oil heats up, add garlic and serrano peppers. DO NOT LET IT BURN!

  Step 4

Add your meat of choice or tofu just as the garlic is beginning to brown.

  Step 5

Add 3-4 tbsp of oyster sauce and about 1 tbsp of sugar, let cook for about 2-3 minutes or until the meat is thoroughly cooked.

  Step 6

Add rice while stirring and folding constantly; adding more oyster sauce and/or sugar to taste. Once the rice is completely softened and brown, add red bell pepper, green onion and one handful of basil then cook for another 1-2 minutes.

  Step 7

Add 4-5 tbsp of fish sauce (available at most Asian markets and some major grocery chains). Fish sauce should be mixed into the rice.

  Step 8

Squeeze 1 lime and mixed into rice. Remove rice from pan and place onto serving dish.

  Step 9

Garnish rice with cilantro. Place a few slices of the remaining unsqueezed lime and slices of peeled cucumber along the side of serving dish. Serve immediately and enjoy!
