Pita and Green Rice
1 TB yeast (1 pkg)
2 C warm water
1 ts honey
Stir and let it sponge.
1 ts salt
4 C whole wheat flour
Mix well with hands. Cover with a damp cloth until doubled. Punch
it down and make it into a fat log. Divide into 12 chunks. Flour
your counter and roll out to about 1/8 inch - about the thickness of
a pie crust. Put on ungreased cookie sheet and set oven to 450. Bake
for five minutes. Lay on a flour sack towel. When cooled you can cut
in half or cut the tip off to fill.
Cook about two cups of rice.
Salt and Pepper
Mash up avocados with rest of ingredients and mix with rice. Put
this mixture along with lettuce, tomatoes and salsa into the pita
