Mmm Fish Tacos (super healthy)

 

Period 6

Ingredients:
1 1/4 pound Cod or Mahi-Mahi
3 3/4 Tomatoes
1 1/4 Onion
Paprika -- to taste
3 3/4 cloves Fresh Garlic -- minced
2 1/2 tablespoons olive oil
2 1/2 cups -- grated or cheddar
5/8 head lettuce -- shredded
Add other spices according to mood and liking
 
Directions:
In a large saute pan add 2 Tbsp. olive oil, onion, tomatoes and garlic. Cook for about 1 minute. Add fish and cook for 5 minutes until soft. Add paprika. In my own recipe, I add whatever spices I want and cook with extra garlic because a) itís super healthy, and literally considered a superfood, and b) garlic makes everything savory taste good.  For the most part.  Grill the tortilla with a bit of butter until warm and soft. Add fish and salsa, cheddar cheese and lettuce.

This recipe is delisious!  Serve it with salsa, sour cream (low fat), and guacamole.  Mmm, fish tacos!  Some fresh tomatoes are also nice on the side.
